Cashew (Anacardium occidentale) is a tropical evergreen tree that produces the cashew seed and the cashew apple belonging to the family Anacardiaceae. Cashew nuts are used throughout the food industry as a whole food or as an ingredient for many finished products, and contain protein fractions which can trigger allergic reactions including potentially deadly anaphylaxis. As these toxic proteins are heat stable and retain their potency, it is important that food production facilities are thoroughly cleaned and checked prior to eliminate cross contamination issues in products that are free of these allergens.
